Deliciously easy egg bake recipe with a gluten and dairy free substitute you will love.
Here is a recipe for a super easy Egg Bake that you can make for any day of the week, not just for Sunday brunch. For this versatile recipe I used eggs, potatoes, spinach, mushrooms, green onions and cheese as the main ingredients. It turned out absolutely delicious!
You can of course substitute or add other ingredients like sausage, bacon, ham, kale, parsley or whatever else you might have in your fridge. For a gluten and dairy free version you can substitute unsweetened almond milk and dairy free cheeses.
The nice thing about these easy cooking recipes, unlike when you’re baking, is the ability to make the recipe your own by adding the foods you like best. Don’t care for mushrooms? Don’t add them! It’s as simple as that. I would have liked to add ham myself, but my daughter doesn’t like it. Oh well!
Spinach & Mozzarella Egg Bake Recipe
Ingredients You Need:
- Butter flavored cooking spray
- 3 cups frozen shredded hash brown potatoes
- 1 package of Mozzarella cheese
- About 1 cup of spinach (I just grabbed a few handfuls)
- 1 cup fresh mushrooms
- 1/2 cup sliced green onions
- 6 eggs
- 2/3 cup of milk
- 1/8 tsp. salt, pepper and paprika
- Parmesan cheese to cover dish
Cooking Directions:
1.) Coat a baking dish with nonstick cooking spray and fill the bottom evenly with potatoes.
2.) Add sliced mushrooms, cut up spinach and onions.
3.) In a bowl combine eggs, milk, salt, pepper, paprika and cut up mozzarella cheese. Pour mixture over the other ingredients in the baking dish making sure the cheese is evenly spread around.
4.) Sprinkle Parmesan cheese over the dish.
5.) Bake uncovered @ 350° for 45 – 50 minutes or until most of the liquid is absorbed.
6.) Let sit for a few minutes before serving.

This egg bake is a great dish to make ahead. It will keep for up to 24 hours when stored in your refrigerator. Simply add 10 to 15 minutes to the bake time.
This Spinach and Mozzarella Egg Bake turned out to be a big success!
It wasn’t dry like some other egg bake recipes I’ve tried in the past, and the flavor was like ‘Wow!’. This is a full meal by itself or you could serve a side of garlic bread, bread sticks or toasted bagels for a full dinner.
A nice glass of wine goes great with this meal as well!
