How to make a healthy red cabbage soup with just a few ingredients.
It’s amazing what kind of easy recipes you can come up with when you only have a few basic ingredients available and no way to get more. We have been house sitting a remotely located resort in Belize for several weeks now and only been to the grocery store twice. To get to the nearest local store we have to use kayaks or hire a boat.
At this time we have a few basic food items like canned butter, tuna and ham, two bags of noodles, a bag of whole wheat flour, sugar, coffee, several packages of yeast, LaLa milk, a small bag of cookies, a few fresh vegetables, apples and several other little items like a bag of soup mix and a jar of jelly. Our spice rack consists of salt, pepper and paprika.
Easy Red Cabbage Soup Recipe
Ingredients You Need:
- 1 small head of red cabbage
- 1 medium sized potato
- 1 red apple
- 1 package of soup mix
- 1 Tbsp of butter
- 1/2 liter of water or enough to cover the cabbage
- salt, pepper and paprika to taste
Cooking Directions:
Remove the outer leaf of cabbage. Cut the head in half and remove the stem. Cut in half again and then cut the cabbage in medium sized strips.
Peel the apple, remove the core and cut in small pieces.
Peel the potato and cut in small pieces.
Add the butter to a medium sized pot and let it melt over medium heat.
Add the cabbage, apple and potato pieces to the pot and let simmer for a few minutes.
Add the soup mix, water and season to taste.
Cook for about 25 minutes over medium heat or until the potatoes and cabbage are done.
We were very happily surprised on how good this healthy Red Cabbage Soup tasted.

To accompany our healthy red cabbage soup we baked a small loaf of whole wheat bread that we topped with New Zealand made Wood Dunn Pure Creamery Butter. Yum! Who knew that butter from a can could taste so good.
