An amazingly easy to make vegetable and cheese dish.

Nick found this vegetarian dish in one of my German cookbooks. I have never made Ratatouille Roman Style before so I wasn’t sure how this dish would turn out.

Instead of cutting the Zucchini in little slices, like when you use a Mandoline vegetable slicer. This Roman Style Ratatouille shows them cut lengthwise, baked with fresh tomatoes and topped with cream, Parmesan cheese and fresh herbs. Yum!

Delicious Zucchini Ratatouille Roman Style

Vegetarian Zucchini dish

Ratatouille Roman Style Ingredients:

  • 2 large Tomatoes
  • 2 green Zucchini
  • 1 small Onion, cut into small pieces
  • 1 Tbsp. Extra Virgin Olive Oil
  • 1 Tbsp. Oregano (fresh or dried)
  • 1 glove of Garlic
  • 1 1/2 oz. freshly grated Parmesan cheese
  • 3 Tbsp. heavy cream
  • 1 Tbsp. Bread crumbs
  • 1 Tbsp. finely chopped fresh Parsley
  • 1 Tbsp. finely chopped fresh Dill
  • 1/2 Tbsp. finely chopped fresh Chives
  • Sea Salt and Pepper to taste

Cooking Instructions:

Preheat oven to 450 degrees Fahrenheit.

Blanch tomatoes and cut into pieces.

Heat a skillet with olive oil.

Add onions, garlic and tomatoes.

Cut the ends of the zucchinis and cut in half lengthwise. Sprinkle with salt.

Mix bread crumbs, heavy cream, Parmesan cheese, parsley, dill and chives.

Spread mixture on the zucchini halves.

Add tomato mixture to the bottom of a baking dish and top with zucchini and black pepper.

Bake in oven for 20 – 25 minutes.

This garden fresh, easy to make recipe, is the perfect blend of fresh vegetables, herbs, cream and cheese.

Adding the texture from the Zucchini allows this to be served as a full meal. This is a very flavorful dish and turned out wonderful. The creaminess from the heavy whipping cream combined with the fresh herbs and cheese is truly delightful. You have give this easy Ratatouille dish a try!

We complimented this vegetarian meal with hot pepper Focaccia bread from our local grocery store and a glass of orange juice.
