Carbohydrates are composed of three elements: carbon, hydrogen, and oxygen. They are the most expensive nutrient in providing heat for the body. Carbohydrates are divided into two categories: effective carbohydrates which are those we can absorb and make use of such as monosaccharides, disaccharides, polysaccharides; and the ineffective carbohydrates, those we cannot digest, such as cellulose.

Sweet potatoes, potatoes, high-sugar fruit and cereal products, such as dumplings and bread are high carbohydrate foods. Low carbohydrate foods are whole grains such as oats, brown rice, and fiber-rich vegetables. Carbohydrates are the main components of cell structure and the main energy supply substances. They are important in regulating cell activity. Lack of carbohydrates in the diet will lead to general weakness, fatigue, decreased blood sugar levels, resulting in dizziness, palpitations, brain dysfunction and so on. Severe cases can lead to hypoglycemia coma. When carbohydrates are excessive in the diet, the carbohydrates will be converted into fat and stored in the body. Obesity can lead to various diseases such as high blood lipids, diabetes and so on.

Therefore, it is wise to regulate the amount of carbohydrates we consume in our daily diet, to avoid series problems such as obesity. A low carb diet is an essential part of keeping fit. I spent a couple of hours preparing a nutritious, and low-carb weekly meal plan with simple recipes, which is easy to implement.

Healthy chicken and vegetable recipe

Low Carb Braised Chicken and Vegetables (Serves 2)

Ingredients:
1 chicken thigh (or chicken breast)
1/3 head of broccoli
1 carrot
1/2 onion
2 large slices ginger
100 ml water
salt
pepper
soy sauce
vegetable oil

Method:

Step 1
Using a boning knife, cut the chicken from the bone.

Dice the chicken meat into 2 cm pieces.

Pour enough water to blanch the chicken (not the 100 ml in the ingredients list – this will be added later) into a pot and add the two pieces of ginger.

When the water comes to the boil, add the diced chicken.

Bring the water to the boil again and cook the chicken for half a minute. Remove the chicken with a strainer and put it aside on a plate.

Wash and cut the broccoli into small florets, dice the carrots and onions into 1 cm cubes.

Pour a little vegetable oil into the pan and use a spatula or silicon shovel to push the oil to the corners of the pan.

Fry the onion until translucent.

Add the chicken to the onion and stir fry for a few minutes to brown the chicken.

COOKING TIPS:

A week long low-carbohydrate diet (slow carbon diet), should avoid any pasta, fried food, sweet drinks, and high sugar fruit. Keep your intake of calories low by limiting the amount of eggs, meat, and fish, etc. in your diet. The main focus should be vegetables and soy products, to achieve adequate nutrition and low carbs.
