We found a recipe for Pork Chops Italian Style on the Kraft website and added our own spin to it. This is the first recipe for our ‘Easy Recipes for Two‘ video series. A really simple pork chop recipe that will not only cut down the time spent in the kitchen, but will also cut down the amount spent out of your weekly food budget.

Mixing garden fresh zucchini, oregano, and Italian style diced tomatoes, we were able to transform ordinary pork chops into something much more savory.

Yes, you can definitely put Italian dressing on pork chops. It’s a wonderful way to marinate the meat. The base of an Italian dressing is vinegar and oil. The acidity of the vinegar will tenderize the meat and the oil is a carrier of flavors. Both will aid in browning and caramelizing your pork chops.

Italian Pork Chop Recipe is an easy recipe for two

Ingredients for Italian Pork Chops:

  • 4     boneless center cut pork chops
  • 2     freshly sliced zucchini
  • 1     tsp. dried oregano leaves
  • 1/4 cup Balsamic vinaigrette dressing
  • 1     can (14.5 oz.) Italian-style diced tomatoes, undrained
  • 1     cup shredded low-moisture mozzarella cheese

Cooking Directions:

Heat a large skillet sprayed with cooking spray on medium high heat. Add chops and cook 2 minutes or until bottoms of chops are browned. Turn chops over and add the sliced zucchini.

Sprinkle with oregano; drizzle with dressing; add tomatoes, cover the pan and bring to a boil. Simmer on low heat for about 15 minutes or until chops are done, stirring occasionally.

Sprinkle with cheese and cover the pan. Serve as soon as the cheese is melted.

To compliment the meal we added some fried rice as a side dish. This would have worked well with plain white rice or bow-tie pasta as well.

End result

The taste of our Italian Pork Chops was light and tangy. One can taste just a hint of the oregano and the acidity of the tomatoes and vinegar went well with the meat and cheese.

Every once in a while I would bite into some of the coarsely ground peppercorns. This was a flavor explosion in my mouth that made me only wanting more. A bottle of light white wine was our beverage of choice. The wine had a slightly fruity and crisp flavor that accentuated the tangy chops and pulled the whole meal together nicely.

  1. WOW! This came out so delicious! I do the same thing, taking inspiration from a recipe and then changing it up. I had some left over roasted sweet potatoes so I just carmelized onions, browned the turkey in a pan, added some other vegetables, red thai chili paste, and a bit of lemongrass (along with everything you put in the recipe) and it came out amazingly delicious! My fiance was shocked because I put it together rather quickly and it was so yummy :)
