Egg salad sandwiches don’t have to be bland.
Our super easy to make Egg Salad Sandwich has a nice chunky texture, is very flavorful, plus it’s healthy for you to boot. Hard boiled eggs, a spicy German mustard and just a little amount of low fat mayonnaise.
Add some spices, onions and pickles and you’ve made up this healthy Egg Salad Recipe. We have been making this high-protein, low-carbohydrate sandwich spread for many years now.
Serve your egg salad on a bun, bread slices or lettuce leaves.

Healthy Egg Salad Recipe
Egg Salad Ingredients:
- 4 – 6 hard boiled eggs (depending on your bread size)
- 2 Hoagie buns, 4 slices of bread or 2 large lettuce leaves
- 1 to 1 1/2 Tbsp. Low Fat Mayonnaise
- 2 Tbsp. Spicy or Dijon Mustard
- 1 Tbsp. Onion, cut into small pieces
- 1 or 2 German Baby Dill Pickles, cut into small pieces
- 1 Tbsp. fresh finely chopped or dried Dill
- 1 tsp. Paprika
- 2 large leaves of lettuce
- Sea Salt and Pepper to taste
Instructions:
Boil eggs until they are hard boiled (about 10 minutes) and shock under cold water.
Peel eggs and cut into medium sized chunks. Check out this German multi-purpose egg slicer. It will save you a lot of time slicing and dicing.
Add mayonnaise, mustard, onions, pickles, dill, paprika, salt and pepper.
Stir until everything is incorporated.
Place lettuce leaves on the bun or bread.
Spread egg salad on top of lettuce and bread.
Serve egg salad sandwiches with fried potatoes, chips or fruit salad.
Healthy Egg Salad Meal:
You can omit the mayonnaise and add more mustard and some pickle juice then wrap the egg salad in a large lettuce leaf. Serve with baked pretzel chips and a Vitamin water.
