Lemon cake featuring lemon juice, lemon zest and greek-style yogurt. Yum!
Warning! This is not a one-bowl type of glazed lemon cake, but the extra effort is well worth it in the end. A light, creamy, lemony yellow cake that’s perfect for your afternoon coffee break or after dinner dessert.
For this fairly easy glazed lemon cake recipe you will need a minimum of three different large bowls. One bowl to whip the egg whites, one to sift the flour into, one to mix the remaining ingredients and then you will need to blend the three mixtures together. This made from scratch lemon cake is truly a labor of love! It’s delicious, not too sweet, light, super moist… and best of all, this lemon cake recipe will yield two regular bread pan sized cakes.
Ingredients:
- 3 cups flour (sifted)
- 1 tsp baking soda
- 1/4 tsp salt
- 1 cup butter, softened
- 6 eggs
- 2 cups sugar
- 1 cup greek-style Vanilla or plain yogurt
- 1 large lemon (2 tsp grated lemon zest &Â 2 tbsp lemon juice)
Directions:
Preheat oven to 350° Fahrenheit and grease two regular sized bread pans or one large 10″ tube pan.
Sift the flour, add baking soda and salt. Set aside.
Separate eggs into two large bowls. Beat the egg whites until soft peaks form then slowly add 1/2 cup of the sugar. Beat until stiff glossy peaks form and set aside.
Add butter, 1 1/2 cups sugar, lemon zest and lemon juice to the bowl with the egg yolks. Mix until fluffy. Slowly add the bowl of flour and yogurt to the mixture and blend well.
Now fold the egg whites into the mixture and pour into the prepared baking pan(s). Bake for 50 – 60 minutes, until lightly brown.
Let cool for 10 minutes and then drizzle a lemon glaze (mix 1 or 2Â tbsp. powdered sugar with lemon juice until smooth) over the top.
