Usually when I make stir-fry or any other dish with white rice, I end up with too much left over rice. This home made easy rice pudding recipe is cooked in a small pan on the stove stop and turns out super delicious every time.

Like I said you can use either uncooked or cooked rice which is combined with milk, sugar, egg, optional golden raisins, and flavored with butter and vanilla. Yummy! If you like sweet things check out these pancakes with some pretty weird ingredients.

Easy Rice Pudding Recipe:

Prep time: 25 min. – Total time to the table: 45 min.

  • 3/4 cup uncooked or 1 1/2 cups cooked rice
  • 2 cups milk
  • 1/3 cup white sugar
  • 1/4 tsp. salt
  • 1 egg
  • 2/3 cup golden raisins (optional)
  • 1 Tbs. butter
  • 1/2 tsp. vanilla extract

Add uncooked rice to medium saucepan filled with 1 1/2 cups of water and bring to a boil. Stir and reduce heat, cover and simmer for 20 mins.

In medium saucepan, combine cooked rice, 1 1/2 cups of the milk, sugar and salt.

Cook over medium heat until thick and creamy, stir occasionally, for 14 – 20 mins.

Stir in remaining 1/2 cup milk, beaten egg and raisins.

Cook 2 more mins., stirring constantly.

Remove from heat and stir in butter and vanilla.

Pour Rice Pudding in serving dish or individual bowls.

Serve your rice pudding while it is still warm and enjoy!

Besides adding golden or regular raisins, try our easy rice pudding recipe by soaking your raisins in a little brandy or whiskey beforehand. You could also add craisins, toasted coconut, fresh blueberries or even chocolate chips to your rice pudding.

I like to top my rice pudding with a dollop of freshly whipped cream.

We don’t eat rice pudding very often, but when I do I make it I usually ask myself “Why don’t I make this more often?”. The rice pudding is so delicious, creamy and perfect!
