Chicken breast recipe with a tangy cranberry sauce you will love.
We eat a lot of chicken and try to come up with different ways of cooking it all the time. Nick made this new cranberry Catalina chicken recipe the other night and we absolutely loved it. You will only need three simple ingredients. The chicken turned out juicy and burst with flavors, while the sauce is sweet and tangy all at the same time.
We served our healthy Cranberry Catalina Chicken with creamy white rice. Plain white sticky rice, Jasmine rice or even garlic mashed potatoes would have been just as good. As you can see in the picture, we had plenty of the cranberry sauce to pour over the chicken and rice.
Cranberry Catalina Chicken Recipe
Cranberry Catalina Chicken Ingredients:
- 14 oz can of Cranberry Sauce
- 8 oz Catalina Dressing
- 4 Chicken Breasts
Cooking Directions:
Preheat oven to 350 degrees F
Pour the first two ingredients in a greased baking dish and stir them up.
Place the chicken breasts on top of the sauce and flip them over a couple of times to coat both sides.
Bake for about 50 minutes or until the chicken is fully cooked.

Serve cranberry chicken breasts on a bed of rice with a mixed green side salad topped with our lemon lime vinaigrette for a healthy dinner choice.
Cooking Tips:
You can substitute boneless pork chops for the chicken breast. Add a package of dried onion soup mix to the sauce to give it even more flavor.
