Healthy and easy to make BBQ baked chicken dinner.
Our baked BBQ Chicken breast with spicy potato wedges and fresh green beans recipe is perfect for the health and weight conscious. We love grilling in the summer time, we grill in the winter, we like to grill BBQ chicken pretty much all year.
Sadly we don’t have a grill at the moment so we came up with this healthy alternative. Nick and I have made this easy to make chicken dinner several times now and it always turns out delicious.

BBQ Baked Chicken Dinner

BBQ Chicken with potatoes and green beans.
BBQ Baked Chicken Ingredients:
- 2 Split Chicken Breast (remove the skin and fat)
- 3 large or 5 small Potatoes (washed and cut into wedges)
- 1/2 cup BBQ sauce
- Butter flavored Cooking spray
- 2 cups fresh Green Beans
- 1 Tbsp. Chicken flavored Soup Bouillon
- 1/2 Tbsp. Cayan or Red Pepper
- 1/2 Tbsp. Paprika
- Salt and Pepper to taste
- 1/2 Tbsp. finely chopped fresh Chives
- Sea Salt and Pepper to taste
Cooking Directions:
Preheat oven to 400 degrees Fahrenheit.
Remove all of the skin and fat from the chicken and cover with salt, pepper and paprika.
Place chicken on broiler pan and place in pre-heated oven.
Cut potatoes into wedges, place on baking dish and cover with spices and cooking spray.
Bake chicken and potatoes for 35 minutes.
Cut the ends of the green beans, place in cook pot and cover with water.
Add soup bouillon to the beans and cook on medium heat until tender. Season to taste.
Spread BBQ sauce on chicken breast.
Bake chicken and potatoes an additional 5 – 10 minutes or until chicken is fully cooked.

End result
Even though we removed all of the skin and fat, the chicken stayed moist and delicious. We used a Honey Mustard BBQ sauce that added a nice sweet touch to the meal.
Any flavor BBQ sauce will do just fine.
The Potato Wedges were crispy and spicy on the outside with a soft center. We had fresh green beans on the side which were flavorful and complimented the meal perfectly. No butter or oil was needed to make this healthy BBQ chicken dinner.
