Healthy Egg Salad Recipe

A healthy egg salad sandwich doesn’t have to be bland and boring.

This recipe is part of our ‘Easy Recipes for Two‘ video series.

Our super easy to make Egg Salad Sandwich has a nice chunky texture, is very flavorful, plus it’s healthy for you to boot. Hard boiled eggs, a spicy German mustard and just a little amount of low fat mayonnaise and some spices, onions and pickles make up this healthy Egg Salad Recipe. We have been making this high-protein, low-carbohydrate egg salad for many years now.

Ingredients you need:

  • 4 – 6 hard boiled eggs (depending on your bread size)
  • 2 Hoagie buns or 4 slices of bread
  • 1 to 1 1/2 Tbsp. Low Fat Mayonnaise
  • 2 Tbsp. Spicy or Dijon Mustard
  • 1 Tbsp. Onion, cut into small pieces
  • 1 or 2 Baby Dill Pickles, cut into small pieces
  • 1 Tbsp. fresh finely chopped or dried Dill
  • 1 tsp. Paprika
  • 2 large leaves of lettuce
  • Sea Salt and Pepper to taste

Instructions:

Boil eggs until they are hard boiled (about 10 minutes) and shock under cold water.

Peel eggs and cut into medium sized chunks. Check out this German multi-purpose egg slicer. It will save you a lot of time slicing and dicing.

Add mayonnaise, mustard, onions, pickles, dill, paprika, salt and pepper.

Stir until everything is incorporated.

Place lettuce leaves on the bun or bread.

Spread egg salad on top of lettuce and bread.

Serve egg salad sandwiches with fried potatoes, chips or fruit salad.

Healthy Alternative:

You can omit the bread and simply wrap the egg salad in a large lettuce leaf. This is called an Un-Sandwich!

Our healthy Egg Salad variation on this American favorite is perfect for a quick lunch or a full-filling dinner when paired with a side dish. It’s chunky texture brings out the flavors of the eggs combined with the mustard, onions, pickles and dill. It is truly super easy to make!

We complimented our egg salad sandwiches with fried potatoes and were listening to John Fogerty’s ‘104 in the Shade’ song.

    No shiitake soup? I’m sorry you had to discontinue that. I’ve never tasted a shiitake, but a few well-known chefs have been encouraging me to try them.
