Easy Spinach And Ham Quiche
I love making easy, one bowl recipes like this cheesy egg bake.
This quiche or egg bake is a great recipe for Sunday brunch. It also makes a wonderful weeknight dinner. You can prepare the one bowl quiche the night before, it only takes a few minutes to mix all the ingredients together, and keep it in the fridge until you’re ready to bake it the next day.

To make individual little quiches, simply pour the batter into a muffin tin and bake in a pre-heated oven for about 20 minutes or until the eggs have set. Fun for kids or for a breakfast get-together with friends and family.
Ingredients You Need:
– 4 Eggs
– 2 cups Milk
– 3/4 cup Biscuit Baking Mix
– 1/4 cup Butter, softened
– 1 cup grated Parmesan Cheese
– 1 8 ounce package Spinach leaves
– 1 cup cubed cooked Ham
– 2 cups shredded Cheddar Cheese
– Salt and Pepper to taste
Heat oven to 375 degrees F or 190 degrees C.
Mix eggs, butter, milk and baking mix in a large bowl.
Add ham, Parmesan and Cheddar cheese, salt and pepper.
Chop up the spinach leaves and add to the mixture.
Lightly grease a quiche or pie dish and add the mixture from the bowl.
Bake for about 50 minutes or until the eggs are set and the top is golden brown.

The ham and spinach quiche turned out wonderfully light and fluffy. I have never made this healthy egg bake recipe before and was pleasantly surprised on how flavorful it was. This is a wonderful dish for weeknight dinner or Sunday brunch.
If you’re cooking for two, simply divide the ingredients in half. Planning on feeding a large family? Double the recipe and bake in two dishes. Serve your egg bake or quiche with a fruit salad and freshly baked croissants.
