Chicken Breasts Fiesta Style
Your healthy chicken breast doesn’t have to be boring.
Here is another super easy to make, one dish recipe for two, with chicken breasts, tomatoes and corn. This is a wonderfully healthy meal for lunch or dinner. This Fiesta Style Chicken Recipe is very versatile. You could substitute any kind of chicken meat, as well as your favorite vegetables instead of the tomatoes and corn.

Ingredients you need:
- 2 Chicken Breasts (remove the skin and fat)
- 1/4 cup Italian Dressing
- 1 medium Onion
- 1 can of Corn (15.25 oz.)
- 1 can of Stewed Tomatoes (14.5 oz.)
- 1 cup of Shredded Sharp Cheddar Cheese
- 1 tsp. Crushed Red Pepper Flakes
- Salt and Pepper to taste
- 1 Tbsp. Finely Chopped Cilantro (optional)
- 1 cup of cut up Zucchini or Ocra (optional)
- Sea Salt and Pepper to taste
Cooking Directions:
Preheat oven to 375 degrees Fahrenheit.
Remove all of the skin and fat from the chicken.
Place all the vegetables in a greased baking dish and cover with half the dressing.
Add pepper flakes, chicken breasts and sprinkle with salt and pepper.
Pour the rest of the Italian dressing over the chicken.
Add the shredded cheese and cover with foil.
Bake for 25 minutes.
Remove foil.
Bake for an additional 20 minutes or until chicken is fully cooked.

End result
This is a one dish chicken recipe that is sure to please everyone. You can omit the stuff you don’t like (we left out the cilantro since neither Nick nor I care for the taste) and add what you do like.
We enjoyed our Chicken Breasts Fiesta Style for lunch and had pita chips and cut up watermelon on the side. This would also make a wonderful dinner with a serving of flavored rice, a baked potato or buttered noodles as a side dish.
