Chicken Bake with Spinach
Our Chicken Bake for Two is a perfect weeknight meal.
For a nice evening meal that offers a step above just regular spaghetti. This chicken, spinach, mushroom and cheese recipe is sure to be a hit. You’ll have this ready in an hour, half of which is the bake time.
Finding the time and energy to cook after coming home from work just got a whole lot easier. Especially once you’ve tasted this outstanding chicken bake with spinach. Perfect for date night!

Ingredients You Need:
- 1/4 lb. of spaghetti noodles
- 3 oz. of baby spinach leaves
- 1/2 a chopped onion
- 1 Tbsp. butter
- 1 (4 oz.) package of freshly sliced mushrooms
- 1 Tbsp. flour
- 3/4 cup chicken broth
- 1 cup shredded cooked chicken
- 1 (5 oz.) Cream Cheese
- 1 Tblsp. Italian herbs
- 3 Tbsp. grated Parmesan Cheese
- 1 cup Shredded Mozarella Cheese
Heat oven to 350 degrees.
Cook spaghetti in a larger saucepan then needed to allow room to add your spinach leaves a minute before the noodles are completely cooked.
On another burner cook the onions in the butter using a large skillet until lightly brown. Stir in mushrooms and cook for an additional 4 minutes. Add flour and stir for 1 minute. Add broth stirring occasionally until thickened.
Drain the spaghetti and place back in the pan.
Add to your mushroom mix, the chicken, cooking creme, and Parmesan. Mix well. Pour the contents into a baking dish that has been lined with cooking spray. Cover.
Bake for 25 minutes. Remove from the oven and add Mozzarella and remaining Parmesan. Return to the oven for 5 to 10 minutes or until the cheese has melted on the top.

This chicken bake with spinach turns out scrumptious every single time we make it. The cheese is golden, the sauce is creamy and the dish itself is very filling.
For two people there was plenty of left over for a second round. Personally, I’m not complaining, lol. This easy to make chicken bake offers a nice variety from just regular spaghetti and tomato sauce, plus its less work than putting together a big pan of lasagna.
We complimented our Chicken and Spinach Bake for Two with a side salad, which offered just the right balance to the pasta. For a nice evening dinner this will be perfect with a nice glass of wine.
