This banana bread recipe is easy to make and so moist… it’s simply irresistible!

The property we are care taking in Hawaii is getting a major driveway overhaul. Nick has been busy helping the demolition crew this past week. As a small token of his appreciation one of the guys brought us a large bundle of home grown Red Cuban Bananas. Yay! I dug through the cabinets, found a glass baking dish, and proceeded to make my first batch of ‘Red Cuban Banana Bread’. Of course we shared with all the guys. :)

Red Cuban Bananas

I have never heard of Red Cuban Bananas so I looked it up:Red bananas, also known as red Dacca bananas in Australia, are a variety of banana with reddish-purple skin. They are smaller and plumper than the common Cavendish banana. When ripe, raw red bananas have a flesh that is cream to light pink in color. They are also softer and sweeter than the yellow Cavendish varieties, with a slight mango flavor.”

Now, let’s get to our banana bread recipe. It is super easy to make, you only need one large mixing bowl, a fork and a large spoon or sturdy rubber spatula. Of course you can always substitute the red bananas for 2 – 3 regular yellow bananas, simply increase the amount of sugar by about 1/4 cup or more depending on how sweet you like it.

4 – 5 Red Cuban Bananas

1/3 Cup Melted Butter

1/2 Cup Sugar

1 Tbsp Brown Sugar

1 Egg

1 tsp Baking Soda

1 tsp Salt

1/2 cup of chopped pecans or walnuts (optional)

1 1/2 Cups Flour

Baking Directions:

Melt the butter in the microwave for about 20-30 seconds. Pre-heat the oven to 350° F. Peel your bananas and use a fork to smash them in the mixing bowl. Pour the butter over the bananas and add the sugar. Mix well.

Once the butter is cooled off a little bit stir in the egg, baking soda, nuts and salt. Lastly blend in the flour and stir until everything is incorporated. This process takes less than 5 minutes.

Bake for about 50 minutes or until toothpick comes out clean.

I have made this banana bread recipe numerous times, both with Red Cuban and traditional bananas, with and without nuts. It always turns out very moist. By the way, the secret to this super easy banana bread recipe is the melted butter.

One loaf of banana bread never lasts longer than a day, so you might want to double the recipe and make two. One with and one without nuts. :)
